Summary: Pectinase is an active pectolytic enzyme preparation that is produced by a selected strain of Aspergillus aculeatus. It contains mainly pectintranseliminase, polygalacturonase and pectinesterase, along with small amounts of hemicellulases and cellulases. Pectinase hydrolyzes pectin, which is a component of the cell wall. They may attack methyl-esterified pectin or de-esterified pectin.
